The Birthday Stack

Birthday breakfast is always so fun to make for the kids or anyone celebrating - however, I don’t love giving my toddlers a pile of whipped cream or frosting at 6 am on a day that I know they’re also going to be eating cupcakes and all sorts of treats!

So this is my birthday stack - good for toddlers or anyone!

Directions:

  • Make your pancake mix - I like to use an organic whole wheat mix and add a tsp of almond extract which gives it an extra dessert like taste without being overly sweet.

  • Next, separate your batter between three bowls while your skillet is warming up.

  • Add solid colored sprinkles to each bowl. I just stuck to blue for one bowl and red (pink for another), stir until you have a color that you like. Leave the third bowl of batter plain for now.

  • Finally start making your pancakes!

  • When you get to the bowl with plain batter; pour as you normally would and then sprinkle some colorful sprinkles right onto the pancake - do this on both sides.

  • When your pancakes are done build your stack and top with fruit, a birthday candle or any other accessories! I have also made these without the birthday goodies and called them “fairy pancakes” or “unicorn pancakes” for St Patrick’s Day I may attempt some green pancakes that I then top with a few lucky charms!
